Black Bean Burrito with a twist



One of the best things about relocating is that one gets to learn a lot of new things about the place; its food, its culture, its history, its food, its traditions and its food. Alright!!! So its mostly the food :) . I had burrito for the first time just a couple of months back and I absolutely loved it. I had to have the recipe so I searched and searched the internet. Found some and then modified them to my taste, made them a little less calorific. Here's the recipe:

Ingredients:
3 large tortillas (one can make tortillas at home with maida/plain flour or wheat flour)
1/2 cup black beans soaked in water for a few hours and then pressure cooked with little salt and drained
1 onion chopped
1 tomato chopped
2 cloves of garlic crushed/chopped
2 green chillies chopped
some shredded lettuce leaves
1 cheese cube grated
2 tbsp sour cream
1 tsp butter/olive oil
1/4 tsp salt

Preparation:
In a pan heat butter/olive oil. Add garlic, green chillies, onion and tomato. Add salt, stir and cook for 2-3 minutes. When the mixture dries up, add cooked black beans, add cheese and mix well. Remove from heat.
Heat a skillet. Place a tortilla over it and spoon the above mixture in the center of the tortilla. Add shredded lettuce leaves. Pat some sour cream on top and roll the tortilla carefully. Remove from the skillet on a plate and serve. If desired, the tortillas can be wrapped in foil and placed in a 350 degrees F preheated oven for 10 minutes to bake them thoroughly.

The amount of cheese may be increased.
Amount of salt and chillies may be changed according to taste.
JalapeƱos and bell peppers may also be added.

The best thing I like about burritos is that, they take very little preparation time and are ready in a jiffy. And it is possible to make healthier versions without much compromising with the taste. It is one of the best guilt free yet delicious meals I can think of.
